What is whey protein?

Whey is the liquid fraction separated from milk during cheese or casein production. Once dried and refined, it becomes one of the most versatile protein ingredients used in food manufacturing — prized for its complete amino acid profile, solubility, and clean dairy flavour.

In commercial supply, whey is most commonly sold in two forms: whey protein concentrate (WPC) and whey protein isolate (WPI). The right choice depends on the protein level, fat tolerance, mouthfeel, and cost profile your application demands.

Whey Protein Concentrate (WPC)

WPC typically contains 34% to 80% protein, with the remainder made up of lactose, milk fat, and minerals. Common commercial grades include WPC 34, WPC 60, and WPC 80.

  • Functional strengths: emulsification, foaming, water binding, gentle dairy flavour.
  • Best for: bakery, confectionery, nutritional bars, beverages, and recombined dairy where some lactose and fat are acceptable.
  • Cost: lower per-kg than WPI, making it the workhorse ingredient across most food categories.

Whey Protein Isolate (WPI)

WPI is processed further — usually via microfiltration or ion exchange — to reach 90%+ protein, with negligible fat and lactose.

  • Functional strengths: high solubility, clear solutions at low pH, neutral flavour.
  • Best for: sports nutrition, clinical and medical nutrition, clear protein beverages, lactose-free formulations.
  • Cost: premium pricing reflects the additional processing and protein density.
